A. Oolong Tea’s Background
In literature oolong tea has been noticed historically back almost 400 years, when the Chinese started to use it widely, as a semi-green fermented tea. As to fermentation, the fermentation process is stopped as soon as the tea leaves begin changing their color. Black tea comes from green tea, but the black tea is fully fermented in processing. That is why it is said that oolong is between green and black tea.
